I don’t know about you but when you are trying to stick to a whole 30 diet plan things start to become tiresome when you find yourself eating the same foods prepared the same way over and over again. It really makes you want to dump that box of elbow noodles into some boiling water because its easy.
While it’s not always easy, I can tell you that it is always worth it. I have spent countless hours searching the internet and annoying friends for new ideas. I am happy to share them with all of you as I try them out ( I mean I am not going to recommend anything that I myself haven’t tried) I am not here to steer you wrong.
So if you like the idea of ginger and cumin stand by … this is a recipe that is easy to over indulge in and its good for you!!!
Alright … enough chatter… here we go !
Thai turkey lettuce cups
1 lb. ground turkey
1/4 c green onion or chives – chopped
fresh ginger (grated, to taste)
1 TBSP soy sauce
1/4 tsp chili powder
1/4 tsp ground cumin (if desired)
pinch of red pepper flakes (if you like more heat)
1-2 cloves garlic, smashed
lettuce, — whichever kind you prefer will work but bib lettuce makes the nicest cups 🙂
olive oil – for the pan
** optional add ins- diced cucumber, matchstick carrot sticks, shredded red cabbage
- Heat the olive oil over medium heat , once heated add in the garlic and saute until fragrant.
- Add the ground turkey and cook until browned. Once browned, add in the soy sauce, ginger, chili powder and cook for 1-2 minutes. Toss in the green onion and cook an additional minute.
- Serve immediately in lettuce cups. Top with fresh carrots, cucumbers, or red cabbage for added flavor.
Ginger tip: only peel what you are going to grate for immediate use. secure the rest of the ginger root in the freeze until needed again. peel what you are going to use and grate again. It will last you much longer this way.
