Caprese grilled chicken

Back on the challenge wagon so 8 weeks of clean eating for me!

Eating clean can seem a little overwhelming at times. Keeping recipes simple and prepping ahead can make all the difference.

I love to take recipes that I love and find a way to make them a healthier way.

Healthy doesn’t have to be boring.

So even though I used food from my Sunday prep day this can be made all together as well.

Here is the recipe !

1- large tomato , rough chop

Fresh basil

A drizzle of olive oil

Salt , pepper and garlic powder to taste

Optional : balsamic vinegar

1 cup grilled chicken , chopped

1/2 cup grilled asparagus

Heat oil over medium heat in a small frying pan.

Add tomato and a pinch of salt. Allow the tomato to cook down, stirring occasionally as it softens.

Smash the tomato a bit and season with salt, pepper, and garlic powder.

Add basil , and grilled chicken.

Pour contents of pan overtop of grilled asparagus.

Drizzle with balsamic vinegar if desired.
