Abs are made in the kitchen

I don’t care who you are, you cannot out workout a poor diet.  Now that doesn’t mean that you can never eat cake or pizza or drink a sweetened ice tea ever again.

What it means is that you should consider more healthier options than not.  I am still a ways away from having abs of any sort, but I do really enjoy how I have been feeling and the way my clothes are fitting.

Whatever your reason for wanting healthy recipes or sweat dripping work outs, make sure that the core of your reasons is for yourself.

It is not selfish to take care of yourself. If you don’t believe me please write it on a post it and stick it to your bathroom mirror. Read it every day while you brush your teeth.

Roasting or grilling sturdy root veggies is a simple, delicious and filling way to get a healthy meal in that tastes good too.

Roasted root veggies

1 bunch of asparagus,  snap off the ends and cut into thirds
1 small sweet potato, peeled and quartered
1 small sweet onion, quartered
1 head cauliflower, rough chopped
1 bag baby carrots
olive oil
kosher salt
pepper
garlic powder

Preheat oven to 475 degrees. 

Toss all over your prepared veggies together and coat evenly with olive oil and seasonings. 

 Spread veggies out onto a sheet pan in a single even layer and roast for 25-30 minutes until desired level of doneness is achieved.  I like all the edges to be browned. 

Grilled veggies: Pick hearty veggies like eggplant, squash, bell peppers, sweet potatoes,  or zucchini. 

These veggies can be tossed with yummy herbs and thrown on a grill right away or marinated for a bit before thrown on the fire.

Veggie Marinade #1
1/2 c olive oil
1/2c soy sauce
1/2c lemon juice
1 clove garlic, smashed

Veggie marinade #2
1/2c olive oil
4 TBSP red wine vinegar
1 tsp black pepper
1 tsp chopped parsley
1 tsp chopped basil 

Veggie marinade #3
1/4c olive oil
2 TBSP honey 
4 tsp balsamic vinegar 
1/2 tsp each black pepper, salt, dried oregano, garlic powder, onion powder

Coat prepared veggies with your choice of marinade and allow to sit for about 30 minutes or toss and immediately place on the grill.

I could seriously eat grilled or roasted veggies every day.

I hope that you give these veggie ideas a try. They are great as a side or as a light meal on their own. Serve with a salad (yes, I know more veggies) or a serving of rice or orzo pasta.

And (yes I started a sentence with and) always remember…..

 

You are worthy. You are important. You are not selfish for taking care of yourself.
