Who doesn’t love a good egg roll? Spring rolls are really my favorite but I have discovered that eggroll wrappers make for a fun spin on a few classics.
You can grab a pack of eggroll wrappers basically anywhere , usually located near the tofu in the produce department. Make a small batch or the whole pack. The unused wraps freeze well for about 3 months.
Savory or sweet it’s a fantastically fun kitchen adventure to do with the kids.
My mini and I make these often. They are a fantastic snack or light meal.
My favorite make at home roll flavor is cheesesteak. Yum!
You will need:
1/2 pound thinly sliced beef or ground beef
1 small onion , fine diced
Provolone cheese
1 pack egg roll wrappers
Optional fillers : mushrooms, bell peppers , hot peppers , sweet peppers
To do:
Sauté the onions (and any other veggie fillers) season with salt and pepper. Set aside and cook the beef with Montreal steak seasoning.
Let the fillings cool a bit so you can handle them.
Preheat the oven to 375 and lay out your wrappers. Place a slice of provolone cheese on each wrapper. Place a tablespoon or so of filling on a corner of the wrapper, and roll it up tucking in the sides.
Place filled rolls on a baking sheet with parchment paper and bake for about 15 minutes.

I’ve also done chicken and broccoli , chicken cordon blu, and pizza rolls. ( All super yummy, but I might be bias)
