The bitter cold is still upon us but that doesn’t mean we can’t have super flavorful comfort foods at our fingertips!
You will need :
1 lb Sweet Italian sausage
1- medium heads of cabbage, rough chop on the smaller side
1 cup shredded carrots
1 small yellow onion , diced small
1-2 cloves garlic , smashed and minced
1- 16oz can diced tomatoes
A smidge of tomato paste
Salt and pepper to taste
To do:
Your pan should be large enough to hold the cabbage even though it cooks down
Crumble and brown the sausage in a large skillet/pot, remove and set aside but do not drain !
Sauté the onions and garlic until translucent & fragrant. Season with salt and pepper.
Add the carrots and cabbage , once the cabbage has mostly cooked down add the sausage back in to warm through. Add more salt and pepper to taste.
Serve alone or over rice or egg noodles.
