Have you ever wanted to turn a favorite dish into a soup? Maybe that’s just the culinarian in me. Anyway I just wanted to share with you my super yummy recipe!
I know although I can’t stand the cold I do enjoy the comfort foods I crave when it’s here. Soup allows me to be creative and enjoy those heavier meals in a lighter form.
You will need :
2-3 medium bell peppers (what ever color you prefer , I use a variety)
1 red onion or yellow onion chopped
2-3 cloves garlic , smashed / minced
1/2 pound ground beef or turkey
1 – 16 oz can diced tomatoes
1 tsp tomato paste
1 cup cooked rice
16 oz vegetable broth or water
Salt, pepper , garlic powder to taste
In a large pot , sauté the onions and garlic until onions are translucent and garlic is fragrant.
Add the ground beef and cook through; season with salt and pepper.
Add the remaining ingredients , season again and simmer for 20 minutes.
