Yes. I am a fall fanatic. I decorate my house with pumpkins and leaves and other fall themed things all the way up until it’s time for Christmas decorations.
It is such a pretty time of year and we love to make s’mores by the bonfire.
When I got up this morning it was so cool and crisp outside I just had to open up the windows. I love that lull between seasons where I can turn off the ac/heat for a few days or weeks.
I made some desserts to help a friend with a catering event he has this weekend and had some left over pumpkin and apple pie filling so of course I needed to find a use to use up the rest. Still deciding what I am doing with that pumpkin purée but I remembered a quick recipe to use up the apple pie filling.

Simple dishes make me happy. Especially when they are kid approved.
Apple oatmeal breakfast bars …. yummy , semi-healthy, kid approved.
To make these you will need …
- 1 1/2 cups Oatmeal ( I use a natural blend with flax seeds and chia seeds for added nutrients)
- 1/2 cup + 6 tbsp salted butter cut into pieces
- 1 cup brown sugar, packed firm
- 1 1/2 cups flour
- 1/2 tsp salt
- 1 tsp baking powder
- 1 can apple pie filling
- Optional: Cinnamon, pumpkin pie spice or another spice you love if you’re feeling like some added flavor
Preheat the oven to 350 degrees and grease a 9×13 baking dish.
Combine all dry ingredients and whisk together. Then, using a pastry cutter or fork combine the butter with the dry ingredients until well blended.
Once well blended, press about 1/2 of the mixture into the bottom of your 9×13 pan. Top with apple pie filling and then top with the remaining dry mixture.
Bake at 350 for about 40 minutes. , allow to cool and cut into squares.
Serve warm, cold or with icecream for an added treat!
We ate ours this morning with a side of fresh strawberries.
